Perfect Hardboiled Eggs


Place eggs in heavy pot and cover them with 1½ inches of cold tap water.

Partially cover pot and bring to a rolling boil.

Cover completely, reduce heat to low and cook eggs for 30 seconds.

Remove the pot from heat and let the eggs stand in the hot water, still covered, for 15 minutes.

Run eggs under cold water for five minutes. This prevents yolk discoloration.
